Libpurple can be installed as a proper library on OS X as it is. I
believe the limitation here is that to install a proper system library
requires administrative access, and Adium aims to remain as a
self-contained .app bundle instead of needing to install some components
system-wide. While a great goal, it does present some challenges, as
Evan has pointed out elsewhere.

While you have a point, in this case it is a limitation of the needs of
the target audience. If Adium installed in a manner more in line with
how, say, Photoshop installs, then libpurple, glib, and friends could
all be installed in a very similar manner to how we do this on other
UNIX-like systems. It's all a matter of the target audience and making
things easy for them (and there's nothing inherently wrong in this
approach!).
