I believe OmniFocus also offers a similar style of Bonjour syncing to  
what you're talking about, Ofri. If we are serious about sync (I'm not  
really sure we need to be), I could try getting in touch with them and  
see if there's any lessons they want to share with us about the  
experience.

Unrelated to the iPhone version, I had actually been thinking about  
adding OmniFocus / VoodooPad style sync to Adium to keep prefs & xtras  
& logs (in roughly the order I was going to try to implement) in sync  
between multiple machines. I hate having to spend a while configuring  
my install of Adium on a new machine.
