I just jumped into this thread, so sorry if I'm stating some obvious
things that have already been suggested.

Shooting off a wild idea (and I'm not saying it's a good one either):
since communicating to your Adium instance is very unlikely to work
because of NAT issues etc., you could use XMPP to communicate to a
connected Adium client. The Adium iPhone client could look whether
there is a (regular) Adium XMPP resource available for its JID, and
relay all its messages to this client (and make sure that Adium relays
the messages to that client). However, it's not a trivial thing to do,
and there are no pre-made protocols for it.
