This theoretical proxy server would need to have some sort of login  
scheme - registration for Adium users making using of this iPhone app,  
with the same information in both Adium on the desktop and the iPhone.

Seems like a lot of 'givens'... a fully serverside connectivity  
solution just seems cleaner and more reliable.  You mention that there  
are problems with serverside solutions that phoning home would  
overcome? Could you expand on that a little bit?
