That's another option, but then the Adium team would have to know the  
account information for all iPhone Adium users, which is not an option  
for me (some iPhone IM devs have done exactly that).

Yes, you would need to have an Adium client running on a machine  
that's accessible from the Internet for that. Port forwarding on the  
router would work, too, though (even via uPnP).
