I don't think it'd be too bad.
The iPhone is essentially a one-app-at-a-time device; the only app
that really needs an exception is iPod (for playing music in the
background). Without something like Growl, an IM client running in
the background would be more annoying than effective—and the
iPhone's screen is so small that Growl could also get annoying,
pretty fast.
So I don't think it's terrible that Adium for iPhone couldn't run in
the background. I wouldn't consider it a blocker. The NDA thing is
much bigger.
