Note that there are a lot of tickets concerning IRC/XMPP MUC on trac,  
you might want to hunt them down one-by-one.

As I've been using Adium for IRC fulltime for a few months now, I know  
about the issues that have to be fixed before it can go into production:
* Toggle User List setting is not remembered
* Own /me doesn't show up
* Foreign /me looks weird with those ** around it instead of just  
"<nick> <message>" (IIRC that's just a message style settings issue)
* topic/subject isn't shown unless you ask for it
* Clicking on a growl popup should scroll the chat window to the place  
where the event occurred, not just open the chat.

There are a few more, but those are the ones I encounter every day.

There's a patch sitting in trac for adding encoding support to IRC  
using a settings popup, I don't know if that one has been analyzed/ 
applied yet.
