What's the point of having screenshots if not to show off what Adium
can do? I'm not saying have a ton of screenshots, rather, have a
variety which actually look different, as opposed to the current
largely homogenous bunch.

Like with the Family link below: don't make the image a full
screenshot, trim it to show *just* the window or part of a window
that we're trying to show off. Why show the menubar if you're trying
to demonstrate how neat the message windows look?

I really have no idea what you mean... what I meant is, there are
some really nice visual elements (status gems, contact list
gradients, etc.) which would look good in a closeup. Just one or two
screenshots, even used as decorations on the site (not necessarily as
the main screenshots)

Yes.
It's not just a page with a grid of same-looking screenshot
thumbnails. Shows off the key elements. Looks good.
