Xavier,

The easiest solution to your problem, which is available using the  
current version of Adium, is for each employee to use Adium on a  
portable device (USB Keychain Drive). The normal version of Adium  
stores logs on the hard drive, as you know. Portable Adium, however,  
which is maintained by a third party and available here:
http://www.freesmug.org/portableapps/adium/

stores all of its information, including logs, on the portable device  
on which the application itself resides.  Your staff can simply take  
to drive with them whereever they go, using it to run Adium and  
access (and store) ongoing logs.
